This morning I took my first of many trips out to the Windy Meadows Farm to pick up my share of the crops for the week. I was able to pick from Bunch Spinach, Bunch Arugula, Bunch Cilantro, Bunch Radish, Potatoes, and Onions. I choose not to take the Bunch Cilantro ( I just did not need that this week) and was able to substitute an additional Bunch Arugula in its place. Radishes, hum, this was the vegetable that I was not so sure about. Do I like radishes? Well like them or not they are very good for you, just ask Wikipedia
Radishes are rich in ascorbic acid, folic acid, and potassium. They are a good source of vitamin B6, riboflavin, magnesium, copper, and calcium. One cup of sliced red radish bulbs provides approximately 20 Calories or less, coming largely from carbohydrates, making radishes, relative to their size, a very filling food for their caloric value.

After going to the farm I came home and began processing my produce.
Bunch Spinach -trimmed, washed, dried, some went into the salad mix and the rest I saute in a bit of olive oil and a tiny bit of butter with garlic, salt & pepper – some for tonight and I am going to freeze some to see how it goes. If this works well I will be able to use at a later date in other dishes.
Bunches Arugula – trimmed, washed, dried, and into the salad mix with some romaine ( as the arugula is a bit peppery).
Bunch Radish - trimmed, washed, dried, cut a few up for lunch in my salad and will continue to use in salad. If you have any great recipes for radishes send them my way.
Potatoes – washed, peeled, shredded and frozen in piles to be hash browns – I will see how this goes?
Onions (4 large) – cleaned, peeled, cut and frozen raw in the vacuum sealed bags 1/2 at a time. One is marinating to be grilled for dinner tonight.
